A Simple Yummy English Muffin Breakfast

English Muffins with French Salted Butter & Apricot Jam

I’ve been getting into eating breakfast to keep my blood sugar up and stop me from being hangry by 1pm. I’ve never been a big breakfast eater but since the mid thirties is creeping I’m having to make a few changes to how I take care of myself.

My supermarket sells Thomas’s English Muffins for “buy 1 get 2 free.” That’s a great deal for something that can be frozen and eaten over time. I’ve never been a big fan until my husband brought home a bag after our trip to Paris. I slathered one with a few pats of the French butter I smuggled into America. As the weather gets cooler it really is the perfect on the go, in my car, breakfast.

The butter I’m using can’t be bought here, but Plugura salted butter is a great substitute as is Bonne Maman Apricot Preserves.
